牛肉絛蟲(Taenia saginata)，此蟲遍及全球食牛肉的國家，尤其是非洲及中東國家，人由於吃了含牛肉絛蟲的幼蟲之生牛肉或未煮熟的牛肉而感染。而牛則由於吃了遭感染人類糞便所污染的水肥或廢水之土壤(含牛肉絛蟲之蟲卵)而傳染，尤其是沿河灌溉放牧之地區，而蟲卵可在土壤中存活數個月甚至數年之久。
一旦牛肉絛蟲的蟲卵遭牛所吞食，約三、四個月便會在牛的肌肉或內臟發育為幼蟲(cysticercus)，而人吃了含牛肉絛蟲的幼蟲之生牛肉或未煮熟的牛肉後，這些幼蟲便會附著在人的空腸(小腸上半段)，約二、三個月即成為成蟲。成蟲可長至四到十公尺 甚至更長，具有一、○○○到二、○○○個節片，後段的節片會脫落隨人的糞便被排出人體外。
