熬煮高湯的過程也有分武(大)火跟文(小)火啊
高湯如果給他長時間煮沸5-6小時 會變苦變澀的
煮滾通常只有開頭那幾分鐘
剩下的n小時都是用文火加熱維持一定的溫度
所以如果照你的理解坊間的熬煮高湯其實都只是保溫而已

嗯，也許吧，悶燒鍋不也就是利用保溫的原理來煲湯嗎？
只是用瓦斯爐要控溫在60度左右是不簡單
不如直接用可控溫電熱水壺來讓湯或牛奶保持在60度 "熬煮" 比較方便吧？
