嗯,在我的認知裡,正宗的皮蛋瘦肉粥應該只有:
粥+瘦肉+皮蛋+蔥花,可能有用一點高湯(?)最後再灑胡椒。

粥底不加高湯,米煮之前泡水加點食油,煮時加點新鮮腐皮,讓粥更香滑
吃的時候撒上一點脆皮, 可惜已經很少香港粥店會這麼做了...
