就我所知..
所謂的鵝肝醬有分鵝肝 鴨肝
口感質地不太一樣 會因為做法而有時候使用鵝肝 有時候使用鴨肝
高級鴨肝醬其實價格不輸高級鵝肝醬
目前台灣很多餐廳所謂的鵝肝醬其實是鴨肝醬
就我所知高雄的帕莎蒂那也是使用鴨肝...應該沒錯...
在台灣... 好像大家不管鴨肝的還是鵝肝的都說是鵝肝醬...
然後在法國其實鵝肝醬的法文真正翻譯不是鵝肝醬...
真正翻譯的名字是神麼我忘了..
而且....肝醬沒人在當主食用的喔...
通常是搭配餅乾做成小點心..或是當成小菜...或搭配主菜..
