一般人對蹄膀的印象,總覺得太油膩,但吃過錢冠樺的「綁蹄」,或是阿輝師古法熬燉的大蹄膀,卻肥而不膩、肉質彈Q,讓人對蹄膀完全改觀。


「綁蹄」是北方道地美食,專營重型機車進口的錢冠樺跟著長輩學得此手藝,先上網販賣,因回響熱烈,後在新光三越百貨超市專櫃寄賣。


他說,學做綁蹄,純是想將式微的美味傳下來,綁蹄要選用黑豬肉,先用滾水川燙去毛,再用鹽、八角、花椒及二鍋頭醃漬後,置放蒸籠蒸4小時,之後以麻竹片夾綁定型,並放入冰箱冷藏4天入味。


錢冠樺說,綁蹄切開,瘦肉呈粉紅色,肉嫩不澀,肥肉則Q而不油,入口香氣撲鼻。
