OK, generally speaking, I don't see any differece between those two. I guess
it's just speaker's preference. And personally, I think I'll say "can't" in
that sentence.
However, if you are writing an essay, you should use "cannot", since it's
not formal to use abbrevation in writing, such as "can't, doesn't, don't, I'm,
you're", etc.

can't 是 cannot 的縮寫。
和 cannot 有分別的是 can not,不是 can't。
當你想表示「無法做……」時應該用 cannot(或 can't),
當你想表示「決定不做……」時應該用 can not(因為必須強調 not)。
然而,現在 cannot 和 can not 已經被混用到沒有人會管兩者分別的程度了。
換句話說,I can't agree with you more 其實是
I'm unable to agree with you more──是正確的,沒問題。
