SIS 748 does not support dual channel. If you need dual channel, then you have to go for Nforce chipset motherboard like Abit AN7. The main reason to go for K7S8XE+ is for it's south bridge, SIS 964. The new version includes SATA and SIS's south bridge is better than Nvidia's Nforce or VIA's chipset.
Another thing I like with K7S8XE+ is th price. It is cheap compare to prices from Nforce's boards. Also, K7S8XE+ comes with 6 USB2.0 ports, also supported by south bridge 964.
In the end, it all depends on your needs and preference. In SIS's official website, SIS 748 only supports one stick of DDR400 ram (K7S8XE+ user manual also states this), but like I said, someone used two sticks successfully.
